Paul Wilson
When did you start at the DLD:
November 2017
Journey to the DLD – what did you do before this role?
My role before the DLD was my first after university. I was working on an R&D project with consulting engineers based in Dublin, examining value recovery from ‘waste streams’ in the brewing and distilling sectors. This time allowed me to evaluate both sectors in detail and helped me decide on my next steps: the whiskey world.
Favourite whiskey?
The Keepers Coin from our Liberties range. A beautiful whiskey.
Favourite whiskey cocktail?
An old fashioned using The Dead Rabbit for it’s spicy notes.
Away from whiskey, what do you spend your time doing?
Nothing crazy. I like to keep relatively active, be it running cycling or other random activities. Spending time with friends and family.
Favourite thing about living in Dublin?
I live outside Dublin in Kildare (a superior county) but I do enjoy working in the city. I can’t say I’m a fan of the traffic or the price of renting, but there’s always a great buzz around town and come Friday afternoons, you’d be hard pressed to find another city that collectively conspires for celebration like it.
Favourite bar in Dublin?
The Dawson Lounge. Blink and you’ll miss it.
