When did you start at the DLD:

July 2019 – I actually started on my birthday!

Journey to the DLD – what did you do before this role?

Before I arrived at the DLD, I began my career in the drinks industry making wine in California and New Zealand, after studying for my degree in Nutrition. I went on to do my Masters in Brewing and Distilling at Heriot Watt University in Edinburgh and from there I moved to Washington DC, to make whiskey, vodka and gin. While I was over there I heard the DLD were hiring and here we are!

Favourite whiskey?

My favourite Irish whiskey is our 13 yr old The Liberties Murder Lane finished in Tokaj casks, or One Eight District Made Rye Whiskey, depending on my mood.

Favourite whiskey cocktail?

An old fashioned.

Away from whiskey, what do you spend your time doing?

I love to travel (before Covid put a stop to that), cooking – I love to experiment with different flavours and foods – and shopping, my guilty pleasure.

Favourite thing about living in Dublin?

I commute to Dublin but the characters and people are what makes the city what it is.

Favourite bar in Dublin?

Vintage Cocktail Club for that speakeasy feel and fancy cocktails.
