Journey to the DLD – what did you do before this role?
My first love was brewing which I studied at Heriot watt and worked in a cask brewery for just under 10 years. I moved to Dublin in 2008 to worked for a large brewery known for making something called ‘the black stuff’. After this, I took off to the West of Ireland to commission my first distillery. I decided that doing it once was too easy and headed back to Dublin to do it all over again!
Favourite whiskey?
Dubliner, very versatile, though if I’m feeling more extravagant, Keepers Coin is a lovely dram.
Favourite whiskey cocktail?
For the winter months – An Irish Mule for the spice of the ginger beer.
For the summer months – An Irish mint Julip.
Away from whiskey, what do you spend your time doing?
DIY or being harassed by my son!
Favourite thing about living in Dublin?
Dublin is full of energy; it has the same feel as Edinburgh but dialled up to 11.
Favourite bar in Dublin?
Dice Bar (hope you come back soon!) in Smithfield.
