When did you start at the DLD:
Journey to the DLD – what did you do before this role?
Before starting at the DLD I was a bar manager in Dublin. During my time working in bars, I completed my General Certificate in Distilling through the Institute of Brewing and Distilling which helped me get to where I am today.

Favourite whiskey cocktail?
This would have to be a Boulevardier. Equal parts whiskey, Campari and Sweet Vermouth. This is typically made using American whiskey but works great with the sweeter notes in Dubliner.
Away from whiskey, what do you spend your time doing?
Away from whiskey, I travel as much as I can. Travelling has always been a priority in my life and it’s a huge part of who I am.
Favourite thing about living in Dublin?
Hailing from Australia, my favourite thing about Dublin would have to be the weather.
I have called Dublin home since 2018 and I love living here. Everything is on your doorstep in this city; there’s incredible bars and restaurants and you are never far from great walking trails and nature. But most importantly, it’s the great people you meet when out in a pub. That’s what makes Dublin so special.
Favourite bar in Dublin?
I like an old pub with plenty of charm and characters in there. My favourites are Fallon’s, right by our distillery in the Liberties, and McDaid’s further into town. Wonderful spots to enjoy a whiskey and pint of stout.
